This Anthology dinner brings together Emmer & Rye and Isidore through a shared approach to cooking. Both kitchens work closely with farmers, millers, and ranchers, building menus around sourcing, seasonality, and process rather than trends or excess.

The food reflects a respect for the full life of an ingredient. Products are chosen for how they’re grown and raised, handled carefully, and used with intention from start to finish. Technique exists to support the ingredient, not to disguise it, with an emphasis on clarity, balance, and thoughtful use.

At its core, this collaboration is about responsibility—how choices in the kitchen connect back to the land and the people behind it. Hospitality here isn’t just about what happens at the table, but about making decisions that hold up over time and contribute to a healthier, more sustainable way of cooking.
